While her family owns a buffalo farm, this stylish gal is a vegetarian. Not only did she share some great answers to my let’s talk meatless questions, but also a recipe for a yummy and easy mexican salad!
When did you start eating a vegetarian diet?
3 1/2 years ago.
What kind of vegetarian would you describe yourself as?
In a nutshell? I don’t eat anything that has a face! So in addition to meat, I don’t eat fish either. I do eat some dairy, though.
Why have you chosen this lifestyle?
I never was a huge meat eater. And cooking with meat really grossed me out. Plus I adore animals so out of respect for them, I don’t eat them. It’s kind of ironic because my family owns a buffalo farm!
What challenges have you faced living on a vegetarian diet?
Well I was anemic for a little while because I wasn’t getting enough iron. I’m now on an iron supplement and make sure I eat foods high in iron. I also have to make sure I get enough protein so I eat a lot of greek yogurt and quinoa.
What restaurants in Edmonton do you frequent?
The Next Act pub (they have the best veggie burger in the city!), Famoso for their margherita pizza, Julio’s Barrio (that have lots of vegetarian options and I love Mexican food) and Blue Plate Diner.
This Mexican salad- I love that’s so easy to make.
- 2 red peppers
- 1 tomato
- green onions
- 2 stalks of celery
- 1 can of corn
- 1 can of red kidney beans
Mix everything together, add some Catalina salad dressing and toss with tortilla strips for crunch.

Any veggie myths you would like to expel?
Yes! That all Vegetarians love tofu. I’m not a fan of tofu. I’ll eat it once in awhile but it’s definitely not my favorite.
