Meatless in March: Recipe Roundup

Spring is here!

Well not really in Edmonton yet but you can pretend by making something with asparagus, carrots, or leeks. Some of these Spring veggies even popped up early, in the meatless recipes we loved in March:

Asparagus:

Lemon Truffle Pasta with Asparagus and Porcini Mushrooms

Asparagus with Pine Nuts

Gluten-free asparagus Quiche

Carrots:

Milky Carrot soup with lemon balm

Leeks:

Green quesadillas

Leek and Potato soup
