Customizable Trail Mix Quinoa

Oh how I love quinoa. This popular “grain” (actually classified as a seed) is very versatile: great at breakfast in place of oats, at lunch tossed with a salad, and at dinner stirred into soups and stews. A complete protein- providing all of the essential amino acids, makes it a great fit for a meatless diet.

Today I’m sharing my favorite way to eat this super food. I combined my love of quinoa with my love of trail mix and created a “salad” that powers me through busy days. (Feel free to eat it for breakfast, lunch or dinner!)

Base recipe:

  • 1 cup dry quinoa
  • 1/2 cup nuts and/or seeds
  • 1/2 cup dried fruit
  • 2 Tbsp garnish (parsely or mint)


  • 3 tbsp olive oil
  • 3 tbsp apple-cider vinegar
  • 2 tbsp maple syrup
  • 1 tsp Dijon mustard
  • 1/2 tsp salt

To cook quinoa: Combine 1 cup uncooked quinoa with 2 cups water in a small/medium pot. Bring to a boil, then lower to simmer for 12 minutes until liquid is absorbed. Fluff with fork and set aside to cool.

Meanwhile, make dressing by whisking together all ingredients.

Mix together quinoa, nuts, seeds and dried fruit. Add any other ingredients you like (I diced up a green apple as I was having this for breakfast) then pour in dressing and toss to coat. Garnish with parsley or mint, depending on your taste and mix-ins. Enjoy!
