Meatless Monday: Chana Masala

The other day I had a craving for Smitten Kitchen’s Chana Masala but didn’t have all the ingredients on hand. Rather than go to the grocery store, I just adapted the recipe to make it a “budget” version. I was pleasantly surprised at the results, and while definitely not authentic, this is a quick easy and inexpensive way to enjoy the flavours of Indian cooking!

Ingredients

  • Olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1/2 tsp chili flakes
  • 1/2 tsp ground ginger
  • 1 tsp cumin seeds
  • 1 tbsp garam masala
  • 1 can diced tomatoes
  • 1 can chickpeas, drained and rinsed
  • Salt, to taste

Directions

  1. Heat oil in a large skillet at medium heat. Add onion and sauté until caramelized, about 5 minutes. Add garlic in for the last minute.
  2. Add chilli flakes, ginger, cumin seeds and garam masala. Stir until fragrant.
  3. Pour in tomatoes with juices, chickpeas and simmer for 10-15 minutes, until thickened.
  4. Add salt to taste.

(I also do recommend trying SK’s version as it’s the closest to authentic I’ve tried)
