Unexpectedly Delicious: Parsley

You may want to reconsider scraping those little green leafs from your entrée… Parsley is a nutrient powerhouse herb that has many wonderful health benefits. Originally from the Mediterranean region, the Greeks used parsley for a number of reasons! They used it in herbal medicine, and other times as decoration for athletes and dignitaries.

In the grocery store, you can typically find two types of parsley: curly-leafed (as seen in the photo) and flat-leafed. The flat leaf parsley typically has a more fragrant scent and less of a bitter flavour, so it holds up better when cooked or when used in hot dishes.

Why Should You Eat Parsley?                      

As mentioned, this little leaf packs a nutrition punch. It is an excellent source of vitamin K, and a good source of vitamins A and C. Parsley has also been valued for its cancer fighting properties. It contains volatile oils such as myricetin, and antioxidants that can help fight diseases such as cancer, diabetes, and osteoporosis.

Because parsley is such a rich source of vitamin K, consistent amounts should be eaten if you are on blood thinners, such as Coumadin (Warfarin). Rapid changes in intake of vitamin K can alter the effectiveness of blood thinner medications.

Nutrition value of 2 Tbsp. parsley:

  • Over 100% of your daily vitamin K
  • Over 20% of your daily vitamin A
  • 11% of your daily vitamin C
  • Rich in antioxidants and flavonols

The Wonders of How to Enjoy It:

Try to use fresh parsley as it is much more flavourful than dried. You can create dips or spreads with it, add it to pestos for extra flavour and colour, or chop it up and enjoy it in soups, stews or green or whole grain salads.
