French Toast with Apple Blueberry Compote – RECIPE

Ingredients

  • 2 egg whites
  • 1 egg
  • ¾ cup milk
  • ½ tsp. vanilla
  • Pinch of salt
  • 2 tsp. butter
  • 8 slices whole wheat bread
  • 1 Granny Smith apple, cored and chopped
  • 1 tbsp. orange juice
  • ½ cup blueberries, frozen
  • 1 tsp. cinnamon

Preparation

  1. Whisk together eggs, egg whites, milk, vanilla and salt.
  2. Melt the butter in a pan on medium-high heat. If you can’t fit all of the bread slices in the pan, start with half the butter for the first 4 slices.
  3. Dip the bread into the egg mixture, being sure to cover both sides.
  4. Place the bread into the pan and cook for 5 minutes on each side.
  5. Meanwhile, combine apples and orange juice in a pot and simmer until apples are soft, ~ 5 minutes.
  6. Add blueberries and continue cooking for 2 minutes.
  7. Serve the compote over the French toast, and sprinkle the cinnamon over the French toast.
  8. Serve and enjoy!
