One Pan Salmon with Roasted Potatoes and Asparagus – RECIPE

Ingredients

  • 400g mini red or white potatoes
  • 1 tbsp. olive oil
  • 8 asparagus spears, trimmed and halved
  • 1 cup cherry tomatoes
  • balsamic vinegar,
  • 2 salmon fillets, about 5 oz. each
  • handful basil leaves

Preparation

  1. Preheat oven to 400 °F.
  2. Combine potatoes and 1 tbsp. olive oil in an oven proof dish.
  3. Roast potatoes for 20 minutes. Add asparagus, cherry tomatoes and salmon (nestled in the vegetables).
  4. Drizzle with remaining olive oil and balsamic vinegar. Cook for 15-20 minutes, until salmon is cooked through (145 °F).
  5. Garnish with chopped basil.
  6. Serve and enjoy!
