Banana Nut Butter Mini Muffins

Makes 24 mini muffins  

Like many baking recipes, these mini muffins can be made ahead of time and packed up for grade school, college or work! Be sure to pair them with a pile of veggies.

 

Ingredients

  • 1 cup whole wheat flour
  • 1 tsp. baking powder
  • Pinch of salt
  • 1/2 cup plain Greek yogurt
  • 1/3 cup nut butter
  • 2 ripe bananas
  • 1/3 cup milk
  • 1 egg
  • 2 Tbsp. applesauce
  • 2 Tbsp. brown sugar
  • 2 tsp. vanilla extract
  • 1/3 cup mini chocolate chips

Preparation

  1. Preheat the oven to 400 °F.
  2. Combine flour, baking powder and salt in a large bowl.
  3. Combine Greek yogurt, nut butter, bananas, milk, egg, applesauce, brown sugar and vanilla into a food processor or regular bowl and mix well.
  4. Add the banana mixture into the flour lightly, being careful not to over-mix.
  5. Fold in the chocolate chips until dispersed throughout.
  6. Spoon batter into a greased mini muffin tin, making 24 mini muffins. Bake for 8 minutes.
  7. Serve and enjoy, or pack up for a later meal.
