Cauliflower Alfredo Sauce

Makes 12 (2 oz.) servings

Pair this Alfredo sauce with black bean pasta, topped with green onions and a side of veggies.

 

Ingredients

  • 2 cups cauliflower, chopped
  • 1 cup skim milk
  • 2 Tbsp. parmesan cheese
  • 1 ½ tsp. garlic powder
  • 1 ½ tsp. onion powder
  • ¼ tsp. Maggi seasoning
  • ¼ tsp. pepper
  • Pinch of salt

Preparation

  1. Boil cauliflower in a small pot until tender. Test by piercing pieces with a fork. Drain and let cool.
  2. Combine cooked cauliflower with remaining ingredients in blender and blend until smooth.
  3. Heat sauce in a small saucepan, stirring as needed.
  4. Serve with pasta and a side of steamed veggies and enjoy!
