Chicken Avocado Rolls

Makes 6 (adult-sized) servings

The chicken salad mixture will hold in the fridge for 3 days, making this recipe ideal for two days’ worth of lunches. If the chicken is cooked ahead of time, this takes less than 10 minutes to prepare and assemble.

 

Ingredients

  • 1 ripe avocado, mashed
  • 2 cups shredded chicken (rotisserie)
  • 3-4 Tbsp. plain Greek yogurt
  • 1-2 Tbsp. lime juice
  • 3 Tbsp. red onion, minced
  • 2 green onions, minced
  • 1/2 tsp. garlic powder
  • 2 tbsp. fresh cilantro or parsley, chopped
  • Salt and pepper to taste
  • 6-8 inch tortillas

Preparation

  1. In a large mixing bowl, combine all ingredients (besides the tortillas) and mix well to combine flavors.
  2. Place a scoop of the chicken salad on the tortilla.
  3. Roll up tightly and slice into ½ inch slices with a serrated knife.
  4. Top with mini tomato and toothpick to hold together.
