Cheeky Chickpea Protein Bars

Makes 8 protein bars

Ingredients

  • ½ cup chickpea flour
  • ½ cup rolled oats
  • 1/8 cup pecans, chopped
  • ¼ cup dried prunes, chopped
  • 2 tsp. unsalted sunflower seeds
  • 1 tsp. flax seeds
  • 1 tsp. hemp hearts
  • ½ cup silken soft tofu
  • 1/3 cup sunflower seed butter
  • 1 egg
  • ¼ cup honey

Preparation

  1. Preheat oven to 375 °F.
  2. Combine all of the dry ingredients into a bowl and stir.
  3. In a separate bowl, combine the wet ingredients and mix well.
  4. Pour the wet ingredients into the dry ingredients and mix.
  5. Pour the batter into an 8 x 8 pan that has been lined with parchment paper.
  6. Bake for 20 minutes.
  7. Let cool, slice into 8 bars and enjoy.
