Chipotle Black Bean Brownies

Makes 9 brownies

Legumes work brilliantly in all kinds of baking, especially these brownies. Beware: these brownies have a tiny chipotle kick.

 

Ingredients

  • 1 ½ cups canned black beans, drained and rinsed
  • ¾ cup quick oats
  • ⅓ cup water
  • 3 Tbsp. cocoa
  • 3 Tbsp. honey
  • 3 Tbsp. coconut oil
  • 2 Tbsp. brown sugar
  • 2 tsp. vanilla extract
  • ¾ tsp. chipotle chili powder
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • ½ cup chocolate chips

Preparation

  1. Preheat oven to 350 °F.
  2. Combine all ingredients except chocolate chips in a food processor and blend until smooth. If it's not combining well, add a little more water until batter is smooth and pourable.
  3. Pour batter into a greased 8 x 8” pan and sprinkle with chocolate chips. Bake for 15 minutes.
  4. Allow to cool, cut into 9 pieces and enjoy!
