Matcha Green Tea Muffins

Makes 12 muffins

Whimsical delicious morsels as enjoyable at breakfast as they would be featured at a St. Patrick’s Day party!

 

Ingredients

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 2 tbsp. matcha green tea powder
  • 1 tbsp. baking powder
  • ½ tsp. salt
  • ⅓ cup milk
  • ½ cup honey
  • ¼ cup coconut oil, melted
  • 1 egg
  • 1 tsp. vanilla extract
  • ⅓ cup chocolate chips

Preparation

  1. Preheat oven to 400 °F.
  2. Mix together flour, whole wheat flour, matcha powder, baking powder and salt in a medium-large bowl.
  3. In a separate small bowl, combine milk, honey, coconut oil, egg and vanilla. Mix well.
  4. Pour wet ingredients into the dry and fold until just mixed. Fold in chocolate chips.
  5. Pour into a muffin tin, filling each cup ⅔ of the way. Bake for 10-15 minutes.
  6. Let cool on a pastry rack. Serve and enjoy!
