Herb Chickpea Scones

Makes 20 scones

These savoury scones have a surprising cheesy flavour, perfect to accompany a cup of tea.

 

Ingredients

  • 3 cups chickpea flour
  • 4 tsp. baking powder
  • 2 Tbsp. Greek seasoning
  • ½ tsp. salt
  • ¾ cup unsalted butter, cold
  • 1 cup skim milk
  • 1 egg

Preparation

  1. Heat oven to 400 °F.
  2. Combine chickpea flour, baking powder, herbs and salt into a bowl.
  3. Cut up butter and mix into dry mixture with a pastry blender until the butter pieces are pea-sized.
  4. In a separate bowl, combine the milk and egg. Slowly add milk and egg mixture to flour mixture and mix until incorporated.
  5. Flour table and dump dough onto counter. Knead 12 times.
  6. Roll out dough with rolling pin to 1 inch thickness. Cut into 20 squares.
  7. Place straight onto lightly greased baking sheet and bake for 10 minutes.
  8. Serve warm and enjoy!
