Homemade Turkey Meatballs

Serves 6 (4 meatballs per serving)

With a little bit of veggies to add softness and flavour, these lean turkey meatballs are a perfect side to a warm vegetable soup this fall!

 

Ingredients

  • 2 tsp. canola oil
  • ½ medium sweet onion, finely diced
  • 1 stick of celery, grated
  • 1 medium carrot, grated
  • 454 g ground turkey/chicken
  • 1 tsp. poultry seasoning
  • Salt & pepper to taste
  • 2 Tbsp. whole wheat breadcrumbs

Preparation

  1. Heat oven to 350°F.
  2. In a medium pan, heat canola oil and add onion, celery & carrot. Sauté until onion is soft and translucent but not browned. Set aside to cool.
  3. In a large bowl, combine turkey, cooled sautéed vegetables, seasonings and breadcrumbs.  Combine all ingredients and shape into 24 meatballs.
  4. Place meatballs on a parchment lined sheet pan and bake 20 minutes or until internal temperature reaches at least 165°F and juices run clear.
  5. Serve with our homemade Autumn Cranberry Sauce!
