Honey Lime Sriracha Roasted Chickpeas

Makes 5 servings (around a handful each)

Ingredients

  • 1 can chickpeas (540 mL), rinsed and drained
  • 1 tsp Sriracha
  • 2 tsp honey
  • 1 tsp olive oil
  • 1 lime, juiced
  • Dash of chili powder

Preparation

  1. Preheat oven to 425°F. Dry and remove outer skins by rolling chickpeas between two pieces of paper towel.
  2. In a medium mixing bowl, combine Sriracha, honey, olive oil, lime and chili powder. Stir in chickpeas until well coated.
  3. Spread chickpeas evenly on a parchment lined baking sheet.
  4. Bake for 15 minutes. Shake pan gently to move chickpeas around and bake for another 15-20 minutes until golden and slightly charred, watching closely for the last few minutes.
  5. Let cool completely on tray and transfer to an airtight container. Chickpeas should remain crispy if used within a few days, but they can also be frozen. To reheat frozen chickpeas, simply sprinkle them on a baking sheet and roast at 425°F until they are heated!
