Lemon and Herb Chicken Breast

Makes 4 servings

This simple, aromatic marinade is a great way to add flavour while also tenderizing the meat, making the final product succulent and juicy.

 

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 Tbsp. olive oil
  • 2 large garlic clove, minced
  • 1 tsp. dried thyme
  • ½ tsp. dried oregano
  • ½ tsp. kosher salt
  • ¼ tsp. black pepper
  • Juice and zest of 1 lime

Preparation

  1. Combine olive oil, garlic, thyme, oregano, salt, pepper, zest and lime juice in a small bowl. Pour into a sealable plastic bag, and add chicken. Cover chicken in mixture, seal bag and let marinate in refrigerator for 4 to 12 hours before cooking.
  2. To cook, preheat grill set to medium-high. Place chicken breasts on hot grill. Once internal temperature reaches 160 °F, remove from heat and allow to rest for 5 minutes.
  3. Serve with our Grilled Ratatouille Salad and enjoy!
