Black Bean Soup

Makes 4 servings

Ingredients

  • 1 tbsp coconut oil
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 stalk celery, diced
  • 2 carrots, diced
  • 1/2 cup corn kernels
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 2 15 oz cans black beans
  • 1 15 oz can diced tomatoes
  • 4 cups water

Preparation

  1. Heat oil in a large pot or dutch oven. Sauté onion and garlic until onions are translucent and soft. Add celery, carrots and spices and continue sautéing for about 5-10 minutes, until vegetables are soft.
  2. Add beans, tomatoes and water, and bring to a boil. Turn down to a simmer and let cook for half an hour.
  3. Using a hand blender, purée most of the soup, leaving some pieces for texture. (You can also transfer 3/4 of the soup to a blender, but please use caution and let cool first.)
  4. Serve and enjoy!
