Mediterranean Baked Zucchini

Makes 3 servings of 2 zucchini halves each

 

Ingredients

  • 3 zucchinis
  • 6 tbsp. hummus
  • 20 cherry or grape tomatoes, halved
  • 3 tbsp. chopped fresh basil + more for topping if desired
  • 2 tsp. olive oil
  • 2 tsp. balsamic vinegar
  • 1 tsp. dried oregano
  • Pepper, to taste
  • 3 tbsp. crumbled feta

Preparation

  1. Preheat oven to 350° F. Wash zucchini, trim ends and cut in half lengthwise.
  2. Put a small amount of water in a baking dish along with zucchini halves, flesh side up. Bake for 20 minutes.
  3. While zucchini is baking, combine tomato halves, 2 tbsp. basil, olive oil and balsamic vinegar in a small bowl. Toss to coat.
  4. Add 1 tsp. of dried oregano and 1 tbsp. of basil to hummus and mix well.
  5. Once the zucchini has cooled enough to handle, scoop out the middle seed portion of the zucchini and discard.
  6. Spoon 1 tbsp. of hummus into each zucchini half and then top with the tomato mixture.
  7. Bake zucchini for another 10 minutes, raising the heat to broil for the last 2-3 minutes.
  8. Top zucchini with feta and fresh basil if desired. Serve warm and enjoy!

Optional: Add olives if desired!
