One Pan Salmon with Roasted Potatoes and Asparagus

This quick, easy recipe requires minimal preparation, perfect for a busy night.

 

Ingredients

  • 400 g mini red or white potatoes
  • 1 Tbsp. olive oil, divided
  • 8 asparagus spears, trimmed and halved
  • 1 cup cherry tomatoes
  • Drizzle of balsamic vinegar
  • 2 (5 oz.) salmon fillets
  • Handful of basil leaves, chopped

Preparation

  1. Preheat oven to 400 °F.
  2. Combine potatoes and ½ Tbsp. olive oil in an oven-proof dish. Roast potatoes for 20 minutes.
  3. Add asparagus, cherry tomatoes and salmon (nestled in the vegetables) to dish. Drizzle with remaining ½ Tbsp. olive oil and balsamic vinegar.
  4. Cook for 15-20 minutes until salmon is cooked through (internal temperature of 145 °F).
  5. Garnish with basil, and serve and enjoy!
