Southwestern Turkey Soup

Makes 6 servings

 

Ingredients

  • 1 tbsp. canola oil
  • 1 cup onions, diced
  • ½ cup celery, diced
  • ½ cup carrots, peeled and diced
  • ½ cup bell peppers, diced
  • 2 cloves of garlic, minced
  • 1 jalapeno, seeded and fine diced
  • 1 can diced tomato, no salt added
  • 2 cups chicken stock
  • ½ tsp. cayenne pepper
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 2 tsp. oregano
  • Pinch of salt
  • 1 tsp. pepper
  • 2 cups cooked turkey, shredded
  • 1 cup black beans
  • 1 cup frozen corn
  • 1 tbsp. fresh cilantro, chopped

Preparation

  1. Heat oil on medium-high heat.
  2. Add onions, carrots, celery and peppers, cook for 8 minutes.
  3. Add garlic, jalapeno, spices, salt and pepper and continue cooking for 2 minutes.
  4. Pour in the stock and the canned tomatoes.
  5. Bring to boil an cook until vegetables are soft, ~ 10 minutes.
  6. Add the black beans, corn and turkey, continue cooking for 5 minutes.
  7. Garnish with cilantro.
  8. Serve and enjoy!
