Stuffed Chicken Breasts

Makes 4 servings

With a feta cheese and vegetable-based filling, these stuffed chicken breasts certainly beat the stuff at the store.

 

Ingredients

  • 1 cup fresh spinach
  • 2 Tbsp. sun-dried tomatoes, diced
  • ¼ cup feta cheese
  • 1 tsp. lemon juice
  • 4 (5-6 oz.) chicken breasts
  • 1 tsp. olive oil
  • ½ tsp. pepper
  • Dash of salt

Preparation

  1. Preheat oven to 375 °F.
  2. Wilt spinach in a small pan over medium heat. Allow to cool.
  3. In a small bowl, combine sun-dried tomatoes, feta cheese and lemon juice.
  4. Slice the chicken breasts lengthwise, without cutting all the way through.
  5. Spread the filling along the crease of the chicken and then close. Place filled chicken on a baking sheet lined with parchment paper.
  6. Sprinkle olive oil, pepper and salt over the chicken breasts. Bake for 15-20 minutes.
  7. Serve with our Roasted Red Pepper Bisque, Marinara Sauce, Balsamic Asparagus and Mushroom Risotto for a full Valentine's Day spread.
