Superbowl Bell Pepper Nachos

This colourful version of a classic nacho Superbowl dish are a refreshing addition to your Sunday appetizer spread!

 

Ingredients

  • 2 chicken breasts
  • 1 jar of salsa
  • 1 cup black beans, no salt added, drained and rinsed
  • ½ cup corn, drained and rinsed, or thawed
  • ½ cup shredded cheddar cheese
  • 20 mini sweet peppers
  • 2 Tbsp. green onion, for garnish

Preparation

  1. Combine chicken breasts and salsa into a pot and bring to a simmer. Allow to cook for 20 minutes, until the chicken is easily pulled apart. Mix the chicken with the beans and corn.
  2. Preheat the oven to 350°F.
  3. Slice the peppers in half lengthwise and remove the seeds. Fill the peppers with the chicken and bean mixture and lay onto a baking sheet lined with parchment paper.
  4. Place some cheese on top of each pepper nacho and bake for 15 minutes.
  5. Sprinkle the green onion on top after the nachos are done cooking. Serve and enjoy the show!
