Grilled Summer Salad

Ingredients

  • 1-2 bell peppers, sliced in half
  • 2 medium zucchinis, sliced in half lengthwise
  • 1 cup corn kernels
  • 1 can black beans, drained and rinsed

Dressing

  • 1 1/2 Tbsp olive oil
  • 2 Tbs chopped fresh parsley
  • 1 hot pepper or 1/2 tsp hot pepper sauce
  • 3/4 tsp salt
  • 2 Tbsp lime juice
  • pepper to taste

Preparation

  1. Preheat your grill then add bell peppers and zucchini. Grill until slightly charred (10-15 minutes, turning every 5 minutes)
  2. Meanwhile, whisk together all dressing ingredients, set aside.
  3. Remove vegetables from grill and let cool to room temperature. Chop into bite-sized pieces.
  4. In a large bowl mix corn, black beans and diced grilled vegetables, stir in dressing.
  5. Can be served immediately or chilled in fridge.
