Leftover Turkey Gumbo

Makes 8 servings

 

Ingredients

  • 2 tbsp. canola oil
  • 2 tbsp. flour
  • 1 cup onion, diced
  • ½ cup celery, diced
  • ½ cup green pepper, diced
  • 1 cup frozen okra
  • 2 cloves garlic, minced
  • 2 cups cooked turkey, died, 1 cup white, 1 cup dark meat
  • 1 can diced tomato, no sat added
  • 4 cups chicken stock, low sodium
  • 1 cup cooked brown rice
  • 1 bay leaf
  • 2 tsp. paprika
  • 2 tsp. parsley
  • 1 tsp. oregano
  • 1 tsp. thyme
  • ½ tsp. cayenne

Preparation

  1. Heat oil in a pot on medium heat.
  2. Add the flour and continue to cook until the roux (oil and flour mixture) begins to brown.
  3. Add onions, celery and peppers, and continue cooking for 5 minutes.
  4. Pour in half of the chicken stock and mix well.
  5. Add the rest of the ingredients and bring to a boil.
  6. Reduce heat and simmer for 5 minutes.
  7. Serve and enjoy!
