Vegan Mac and Cheese

Makes 4 servings

 

Ingredients

  • 2 cups whole wheat pasta, cooked
  • ½ cup yam, cubed and boiled
  • 1 tsp. lemon juice
  • 2 Tbsp. nutritional yeast
  • 1 Tbsp. olive oil
  • ¼ cup onions, diced
  • 1 clove garlic, minced
  • 1 tsp. pepper
  • ½ cup tomato, sliced

Preparation

  1. Warm olive oil in a pot, add onions and sauté until soft, ~8 minutes.
  2. Add garlic and continue cooking for 2 minutes.
  3. Puree the yams with 1 Tbsp. of nutritional yeast in a food processor and add them to the pan.
  4. Once the yams are hot, remove from heat and add the rest of the ingredients, except the remaining nutritional yeast and the tomatoes.
  5. Add water if sauce is too thick.
  6. Pour into a baking pan.
  7. Add sliced tomatoes and the rest of the nutritional yeast.
  8. Broil in the oven on low for 10 minutes.
  9. Serve and enjoy.
