Vegetarian Chilli

Serves 4-6

Ingredients

  • 1 medium red onion, diced
  • 1 bell pepper, diced
  • 2 cups peeled diced sweet potato or butternut squash
  • 1 Tbsp oil
  • 3 large garlic cloves, minced
  • 1 Tbsp chili powder
  • 1 Tbsp cumin
  • 2 tsp unsweetened cocoa powder
  • salt and pepper, to taste
  • 1 28 oz can diced tomatoes
  • 1 14 oz can black beans
  • 1 14 oz can kidney beans
  • 1 cup water

Preparation

  1. Start by prepping all your veggies.
  2. Heat oil in a large pot over medium heat, add onion, bell pepper and sweet potato; cook until onion is translucent, then add garlic and cook for 2 more minutes.
  3. Stir in spices, let sit for one minute.
  4. Add water, tomatoes and beans and bring to a boil.
  5. Cover and reduce heat to simmer for 2 hours. Stir occasionally.
