Spring Vegetable Frittata – RECIPE

Ingredients

  • 1 tbsp. olive oil
  • ¼ cup onions, diced
  • 1 cup asparagus, chopped
  • 1 cup cherry tomatoes
  • 8 eggs
  • 1 tbsp. milk
  • Pinch of salt
  • 1 tsp. pepper
  • 2 oz. goat cheese
  • 2 cups arugula

Preparation

  1. Preheat the oven to 400 °F.
  2. In an oven-proof pan, heat the oil on medium high heat and add the onions and cook until soft, ~ 8 minutes.
  3. Add asparagus and tomatoes, continue cooking for 5 minutes, until the asparagus is soft and the tomatoes begin to burst.
  4. Add the arugula and allow to wilt.
  5. In a bowl, combine eggs with milk, salt and pepper and whisk together.
  6. Pour the eggs into the pan and lightly stir until eggs start to set.
  7. Stir in the goat cheese.
  8. Transfer the pan into the oven and allow to cook for 10 minutes.
  9. Serve and enjoy!
