Happy Birthday to Revive with Black Bean Birthday Cake

September 2016 marks Revive Wellness’s 10th Anniversary and we are marking the occasion with a special recipe – Black Bean Birthday Cake!

Ingredients:

Cake

  • 1 can of unsalted black beans (approx. 15 oz. each)
  • 3 eggs
  • 1 Tbsp. vanilla extract
  • 1 tsp. salt
  • ½ cup of butter or coconut oil
  • ½ cup of honey
  • ½ cup cocoa powder
  • 1 tsp. baking powder
  • 1 tsp baking soda

Chocolate Drizzle Topping

  • 1 cup dark chocolate chips

Preparation:

  1. Preheat oven to 325 °F.
  2. Combine beans and eggs into a blender or food processor and blend until smooth.
  3. Pour into a bowl and combine with remaining cake ingredients and mix well.
  4. In a cake pan, coat the sides with cocoa.
  5. Cut a circle in parchment and line the bottom of the pan.
  6. Pour the cake batter into the cake pan.
  7. Bake for 40 minutes.
  8. Remove from heat and allow to cool.
