What Is Eosinophilic Esophagitis (EoE)?

EoE is a chronic, allergic inflammatory condition of the esophagus (1, 2). It happens when eosinophils (a type of white blood cell involved in allergic responses) build up in the esophagus (1, 2). These white blood cells build up as a reaction to certain foods (such as milk, wheat, and eggs) and possibly some environmental allergens (such as dust, mold, and pollen’s) (3). The foods and other allergens that cause inflammation are not the same for everyone. The inflammation can lead to a range of symptoms, including:

  • Trouble swallowing (1,2)
  • Food getting stuck in the throat (1,2)
  • Chest pain or discomfort after eating (1,2)
  • Heartburn that does not respond to typical treatment (1,2)

EoE can be frustrating, puzzling, and even painful. Food, which should provide nourishment and comfort, may now be a cause of stress and sickness. However, you can effectively manage EoE with the proper guidance and support.

Why Nutrition Is Key to Managing EoE

For many people with EoE, specific foods cause the inflammation. That’s why dietary therapy is often one of the first lines of treatment. There are several evidence-based approaches to managing EoE through diet, including:

  • The Six-Food Elimination Diet (SFED or 6FED): Removing the most common food triggers (milk, wheat, eggs, soy, nuts, and seafood) and gradually adding them back in a specific order to spot the most likely triggers (5).
  • Targeted Elimination: Based on your history of symptoms and the most common of the six main food triggers (5).

While these diets can help with symptoms and inflammation, they are much easier said than done. The diets can feel restrictive and emotionally taxing without the right support. Being told by your doctor to follow an elimination diet without much further guidance can feel like you were asked to complete an impossible task. It might feel like you can’t eat anything you currently eat without risking making your symptoms worse. Taking out all of these foods from the diet without guidance on appropriate substitutes can feel impossible on your own. Not everyone is the same in terms of what their triggers or main triggers are, which makes it both very important and very challenging to determine what they are. That’s where we come in.

How a Dietitian Can Support You

Our team includes a dietitian, Matthew, who specializes in managing EoE. He deeply understands the science of the condition and the emotional weight that often comes with it.

Here’s how we help you navigate this journey:

  • Personalized Guidance: No two cases of EoE are exactly alike. We tailor plans to your lifestyle, preferences, symptoms, and nutritional needs. While your diet will look different from what it was before, we will work to make sure that you still get to enjoy food while reducing symptoms.
  • Safe Elimination and Reintroduction: We help you remove possible trigger foods while still nourishing your body. We will make sure you are getting the nutrients you need and that we are filling in the gaps left by the foods that have been removed. Afterwards, we guide you through reintroductions in a structured, evidence-based way.
  • Meal Planning Support: You’ll get practical tools, recipes, and shopping tips to make eating simpler and less stressful.
  • Ongoing Support: You’re not alone. We’re here to answer your questions, troubleshoot challenges, and cheer you on every step of the way.
