Recipe of the Month: Black Bean Brownies

If you are looking for a simple treat that feels indulgent but still brings some nourishing ingredients to the table, these black bean brownies are a great option. Black beans add fibre and a soft, fudgy texture while oats and cocoa create a rich chocolate flavour. They are quick to make in a food processor and bake in just minutes. Enjoy them as a mindful treat when you are craving something chocolatey.

Makes 9 servings (1 brownie per serving)

Ingredients

  • 1½ cups canned black beans, drained and rinsed
  • 3 tbsp unsweetened cocoa powder
  • ¾ cups quick oats
  • ¼ tsp salt
  • 3 tbsp honey
  • 2 tbsp packed brown sugar
  • 3 tbsp coconut oil
  • 2 tsp vanilla
  • ⅓ cup water
  • ½ cup semi-sweet chocolate chips

Preparation

  1. Preheat oven to 350°F.
  2. Add all ingredients except chocolate chips to a food processor and blend until smooth.
  3. Spread batter evenly in a greased 8 x 8 inch baking pan. Sprinkle with chocolate chips.
  4. Bake until a toothpick inserted in the center comes out clean, about 15 minutes.
  5. Allow to cool fully in pan on a rack.
  6. Brownies may be stored in an airtight container at room temperature for up to 5 days, or frozen for up to 3 months.
  7. Serve and enjoy!
